Lemony Orzo Veggie Salad Recipe

  • 1/4 c. Bistro Blends Sun-Dried Tomato Balsamic Vinegar
  • 3/4 c. Orzo, uncooked¬†
  • 1/2 c. Feta, Veggie Feta or Goat Cheese, crumbled
  • 1 tsp. Lemon Rind, finely chopped
  • 3 Tbs. Lemon Juice
  • 1/2 c. Cucumber, peeled and diced
  • 1/2 c. Red Bell Pepper, chopped
  • 1/3 c. Green Onions, chopped
  • Cook orzo; set aside
  • In a large salad bowl, gently whisk together, lemon rind, lemon juice and Bistro Blends Sun-Dried Tomato Balsamic Vinegar.
  • Blend orzo, cucumbers, red bell peppers, green onions and cheese with dressing.
  • Cover, chill; then serve
