Crockpot Raspberry Balsamic Meatballs

  • 1/4 teaspoon red pepper flakes
  • Sliced green onions, for garnish
  • Sesame seeds, for garnish
  • 1 cup raspberry preserves if a stronger raspberry flavor is desired, plus 1-2 tablespoons sugar
  • Spray crockpot with a non-stick spray
  • Add ingredients listed above (minus ginger), (plus raspberry preserves/sugar if you desire), stir together using whisk if need be
  • Once combined, remove 1/2 cup of mixture and set aside
  • Add meatballs, stir till coated (frozen is okay)
  • Cover and cook on low for 5 hours or high for 2 1/2 hours
  • Remove lid, add ginger and sauce that was set aside, turn on high for 15-20 minutes
  • Garnish with green onions/sesame seeds
Serve over rice as a main dish or with toothpicks as appetizers
