Ingredients:
- ¾ c. Orzo, uncooked
- 1 tsp. Lemon Rind, finely chopped
- 3 Tbs. Lemon Juice
- ¼ c. Bistro Blends Sun-Dried Tomato Balsamic Vinegar
- ½ c. Cucumber, peeled and diced
- ½ c. Red Bell Pepper, chopped
- 1/3 c. Green Onions, chopped
- ½ c. Feta or Goat Cheese, crumbled
Preparation:
- Cook orzo; set aside
- Make Dressing;
- In a large salad bowl, gently whisk together, lemon rind, lemon juice and Bistro Blends Sun-Dried Tomato Balsamic Vinegar.
3. Blend orzo, cucumbers, red bell peppers, green onions and cheese with dressing.
4. Cover, chill; then serve
